Easing Into Paleo

I'm a newbie at this so bear with me. I have tried the Paleo diet before to only set myself up for failure. So I'm trying it again, but easing into it slowly. It's especially difficult for me to eliminate pasta or bread from my diet because I'm Italian as you know. But as I get "younger", I seem to have no control over gaining a few pounds here and there. I don't want complications like heart disease and diabetes. I wanna be shaking my booty at 90 years old. Even then, it'll still be a scary sight, but possible. That's what it's all about, right? Possibilities. Why not? I tried this 'diet' before, and I got very frustrated and basically dove into a huge plate of pasta and said, 'fug it'. The next morning, I had stomach cramps and aches like you wouldn't believe. I have never been checked for gluten allergies, but I'm assuming that the wheat today is much different than the wheat we used to consume years ago. In fact, Japan just recently rejected the U.S.'s import of wheat and said it was not suitable for human consumption. But we keep eating it! Sheep. I'm also concerned about GMOs and their impact on our health. That's scary. Our food is getting tainted while we just sit back and say, "Well something's gonna kill us eventually..."  Not good enough. So I am trying it again. It's a "light" Paleo diet. I call it light because I do not follow every rule. I'm trying to be realistic about it so I don't set myself up for failure. But I found some great ideas through friends, doctors and websites. One doctor friend advises me that saturated fat isn't the devil - it's the sugars that wreak havoc on our bodies. So to start out, I eliminated ALL sugars from my diet. That was step one. Step two? Pasta (a side dish) only once a week --- if at all.

One cool suggestion was spaghetti squash. Now I won't lie to you, it does not have the same texture as pasta. You can totally tell it's a veggie. Let me just warn you --- it's messy and it's quite dangerous to cut this thing open. Please be careful. What I do is, I poke four holes in the sides of the squash. Place the squash in the microwave for 12 minutes. Take a oven cloth, hold the squash and cut very carefully with a larger knife. Take the seeds out as best you can.  Grab two spaghetti squashes if you can. Makes more "pasta". You should be able to fork out the "spaghetti" effortlessly.

Then what you wanna do, is cook range free no antibiotic organic chicken. I prefer skinless/boneless thighs. I make a concoction of coconut oil, garlic, parsley, salt, pepper with a bit of lemon and pour it on my chickadees before I start baking them. 


Very important that you prepare a topping for your spaghetti squash, or else it'll be bland. So I use a very light topping, olive oil, fresh garlic, parsley, basil and freshly chopped tomatoes. Cook your chicken for an hour and a half on 350 in the oven, when that's done, top your spaghetti squash with your amazing sauce and put the chicken on top of that. Voila, a faux spaghetti that is pumped up with more vitamins that pasta ever can. But, yes....I do miss my pasta!

Burger topped with sautéed onions & squash. 

Baked organic antibiotic free chicken.
Wild Atlantic King Salmon with kelp (seaweed) and local greens.
A sea of salmon, great for omega 3 intake.
Who doesn't love steak? Grass fed beef.
And, sometimes when you're out, you gotta run with whatever steak they have.

So, for now I am trying my best to stick to this delicious diet, but sometimes I do crave pasta and breads, which makes my dilemma into an 80/20 Paleo I believe. I do incorporate avocados, bananas and berries for fruit. Slowly but surely, I am doing away with dairy, but right now, I can only do what I can do. Wish me luck and hopefully, you'll enjoy some of my ideas that I got from other Paleo folks.
